That's why when I spotted these
at my grocery store, I was so excited.
And then I had them for lunch one day. It was the most beautiful plate...a little cottage cheese, some interesting whole grain crackers, and these beets (Sweetfire). Let me just say I have been thinking of them ever since. Not everybody is a beet person but if you are, look for Love Beets at your store.
Besides this little unsolicited endorsement, I also wanted to pop in to let you know that my dad is at home (since last Thursday) and he's doing so well. It will take at least 3 months before he can walk or drive but he's doing really, really well. His spirits are high and he's amazing at hopping around (with a walker).

are these pickled? my mom used to make jars and jars of pickled beets every year and loved them with roast beef...i haven't had any in a very long time...
and glad to hear your dad is recovering nicely. my dad suffered some bad breaks in his leg a few years ago, spent 6 months in a wheelchair and now walks with just a bit of a limp. good luck to him! :)

So glad to hear your dad is doing better! And I really, really love beets and thank you for reminding me, it's been far too long since I have eaten them! I'll be looking for those, too!
I hope they come up here...I am the only one who eats beets in my family. I always but myself a quart basket of tiny ones in the summer, in season and eat them every day for a few weeks.

I'll have to see if my supermarket carries those beets. My husband doesn't like them either.
we all like beets around here! our CSA has them in the summer, and i found that roasting them in foil and simply rubbing off the skin is the easiest way to prepare them (and not too too messy-- though it still has the potential to turn your fingers pink, but isn't that the fun?)
we're not into pickled around here. roasted, with some goat cheese, olive oil and salt and pepper-- nomnomnom!
i'll have to skip on the beets!!
(though i love their color!!)

oh the post above about beets color reminded me-- this summer when we had a glut from our farm (and i was eating 2 a day, which has effects ;)), lucy and i used a few beets to make prints. we had a messy blast!
Ooh these look so good! I love beets too. Sadly we don't have a Wegmans or a WholeFoods nearby. The next time I am at Kelli's house I will hit up the Wegmans in Fredricksburg.

& love, love beets my mom cans them and uses this precious vintage cutter thing that makes them so sweet peeking out of the jar. she found one of those vintage cutter thing-ys and gave it to me for christmas.
