The biggest turkey I've ever seen is in my oven. Rich's whole family plus my parents are here for Thanksgiving...25 of us in all. Since this bird cooks for 7 hours and we're eating in the early afternoon, I thought it best to cook it today and slice and heat tomorrow. I hope it's a good plan...we'll see.
I also made the stuffing and cranberry relish today. My mom made broccoli caserole and sweet potato pudding today. Tomorrow morning, my father will make potatoes augratin and macaroni and cheese. As soon as I wake up, I'll put the rolls out to rise. And all of Rich's family will bring a dish. So I think we're set.
I'm sure you are up to the same sort of business I just wanted to pop in to wish you and your family a very happy Thanksgiving. Count your blessings each by name and, if there's someone missing from your Thanksgiving table today, may you feel their presence in your heart.

Hi. I have often cooked my turkey the day before serving it. Slice it up and put it in a cassorole dish. Then heat it up using some chicken broth as moisture in the bottom of the dish. It sure makes things a lot easier! A lady that I know who does a lot of catering always does this. Be sure to practice proper food/temperature saftey though...cut the turkey up and get it chilled as quickly as possible. Happy Thanksgiving from one of your Canadian blog readers!

We are eating with neighbors (my best friend since age 12) and cooking a turkey and dressing here. Katie will make the relish. I love the day before thought but my husband is such a purist! He's also a mean pie baker but he passed on that job this year!
I am still waiting for my box from Silver Bella. They found it in a back room yesterday! I still have a little treat for you and Alfredo...but it's in the box...lol. It will come soon, I am sure!

I would love to know how that turkey prep worked for you. I did a 25 pounder in 6 hours but had no room for anything else which was a big pain !!! I would like to try 2 12 pounders next year - more parts for everyone !!! Happy Thanksgiving : )
